Edwards Bubble and Squeak
Ingredients
- 50g butter
- 1 red onion, sliced
- Handful of cranberries
- 200g cooked gammon, cut into chunks
- 100g leftover stuffing or sausage meat
- 8 leftover roast potatoes, cut into chunks
- 5 rashers leftover bacon, chopped into large pieces
- 6-8 raw Brussel sprouts
Cooking Instructions
- Melt the butter in a large pan and fry the red onion until softened.
- Crush the cranberries with a mortar and pestle add to the onions.
- Once the onions have browned, stir in the remaining ingredients. With a fork, mash the roast potatoes, ensuring it is distributed evenly to bind the meat.
- Add the Brussel sprouts and cook for 15 minutes, adding more butter if needed.
