Ingredients

  • 50g butter
  • 1 red onion, sliced
  • Handful of cranberries
  • 200g cooked gammon, cut into chunks
  • 100g leftover stuffing or sausage meat
  • 8 leftover roast potatoes, cut into chunks
  • 5 rashers leftover bacon, chopped into large pieces
  • 6-8 raw Brussel sprouts

Cooking Instructions

  • Melt the butter in a large pan and fry the red onion until softened.
  • Crush the cranberries with a mortar and pestle add to the onions.
  • Once the onions have browned, stir in the remaining ingredients. With a fork, mash the roast potatoes, ensuring it is distributed evenly to bind the meat.
  • Add the Brussel sprouts and cook for 15 minutes, adding more butter if needed.
