Bacon and Eggs Breakfast Cups

If you are looking for something a but different for your bacon and eggs this weekend, then this recipe is a delicious, simple and quick family recipe. Perfect for a weekend breakfast treat.

Our Unsmoked Dry Cured Bacon is cured traditionally by hand for a number of days then air dried for a full flavour.

When it comes to pork, we source only the finest cuts of Red Tractor British Pork. This gives the meaty taste our customers love.

  • 10 Edwards Dry Cured Bacon rashers
  • 8 large eggs, beaten and seasoned
  • 1 tbsp. of chives (chopped)
  • 3 tbsp. of milk
  • 130g cheddar cheese, grated

Cooking Instructions

  • Preheat the oven to 180°C / 160°C Fan / Gas Mark 4. Grease a 12 piece muffin tray with butter.
  • Line the muffin tins with the Edwards Dry Cured Bacon. Add the milk, chives and 100g of grated cheese to the beaten eggs and mix.
  • Carefully pour the eggs and cheese mixture into the bacon cups. sprinkle the rest of the grated cheese over the top.
  • Bake for 27-30 minutes, the bacon should be crisp and the egg filing golden brown. Serve with bread, grilled tomatoes, spinach or rocket.
